What is the optimal temperature for the refrigerator and freezer?

It is not in vain that companies producing refrigerators explain in beautiful advertising booklets what the middle and lower shelves are for, a zone for fruits and vegetables, in which many people keep their grandmother’s jam.
In this article, we will try to answer the question of how much the temperature should be in the refrigerator and what actually needs to be stored on different shelves.

Back in the USSR, which did not have .
.. no, not what you thought, but buzzwords like no frost, they pretty accurately set the temperature regimes for storing food in the refrigerator. According to GOSTs developed by Soviet specialists, the optimal temperature of the refrigerator and freezer should be as follows: the temperature in the refrigerator compartment is from +5 °C to +12 °C, in the freezer compartment – -24 °C to -18 °C. Today, these parameters, if they differ, are not much different. For example, for the main chamber, experts recommend setting the temperature to +3 °C. This will allow you to follow the advice on the location of products on different shelves. So, meat and cheese are usually stored on the lower shelf, dairy products and ready meals are in the middle zone, and fruits are on the top.
Please note that the above tips apply to most, let’s say, not spoiled with the latest technology devices. For example, modern Samsung models may have All-Around Cooling (for example, Samsung RB37A5271EL).
Other manufacturers call it Flow Cooling System, Multi Flow, AirFlow or DynaCool . It can be found in the models Haier C2F636CFFD, Gorenje R6192LX and others. Its meaning is that thanks to the air duct system, the temperature is evenly distributed throughout the refrigerator compartment. Therefore, there will be no differences of 1–2 degrees between the lower and upper shelves, for example. So, if you wish, you can shift the meat even higher. Especially if you have a dog that knows how to open the refrigerator and steal such a valuable product from the lower shelves.

It is important to note that almost all modern refrigerators have freshness zones.
For example, Eldorado’s product range includes over 1,000 refrigerators with a special compartment for storing fresh food. We are used to storing tomatoes and cucumbers with herbs there – in general, everything that allows us to quickly cut a salad to maintain a healthy lifestyle. In fact, experts do not recommend using the fruit and vegetable area for some of our favorite fruits and vegetables, no matter how paradoxical it may sound.
For example, cucumbers, tomatoes and herbs should not be stored in this zone. Even at +8 °C, they begin to lose their taste and useful vitamins. These products are best stored at room temperature, but not more than 3-4 days. Also, do not put bananas in the refrigerator: their cellular connections are quickly destroyed, and they begin to turn black.
What should be stored in this zone? Most often, we are talking about heat-resistant vegetables and fruits: celery, apples, plums, pears, cabbage.
Freshness zone
When present, the freshness zone becomes the coldest place in the refrigerator compartment.
The temperature here is 0-1 °C.
The freshness zone can be a separate drawer or even a compartment with its own door. The temperature can be unregulated (the manufacturer sets it so that the zone is always 0–1 °C) or adjustable. Then the owner of the refrigerator himself can set the temperature, for example, from -3 °C to +3 °C. Also, some manufacturers (Electrolux, Liebherr, Whirlpool and others) can give the owner control over the humidity in the freshness zone. For example, it can be set to 50% or even 90%. Door
The door is considered the warmest part of the refrigerator for a reason. In its upper part it can be up to +10 °C, and in its lower part – up to +4 °C.
Surprisingly, there is a nuance with the door, as with the area for vegetables and fruits. Often, manufacturers install beautiful and convenient egg molds in the door. But experts recommend putting eggs on the bottom shelf of the refrigerator.

Freezer

A place where frozen meat and fish are stored (it is advisable not to keep them in this state for more than 6 months), as well as frozen berries, fruits, vegetables (store no more than a year) and dough.
If the temperature of the freezer can be adjusted, experts advise setting it from -16°C to -18°C if this zone is not completely filled. If you have a “full landing” in your freezer, then it is better to lower the temperature to between -20 ° C and -25 ° C. So that all products have enough cold.
You may feel a bit of a nuisance (sometimes literally) if you’ve followed all the food placement tips, but they’ve gone bad before their time. For example, milk did not live up to the expiration date. You should also think about the temperature settings if the food often freezes or, conversely, seems too warm. If you notice condensation, this is also a reason for a small test.
To check the temperature in the refrigerator, it is enough to use an ordinary alcohol thermometer.
Leave it on the top shelf for 20 minutes, fix the indicators. Then run the same test on the rest of the shelves. If the indicators are very different (do not forget what temperature should be set in the refrigerator: on the top it should be from +5 to +7 °C, on the bottom – about +2 °C), then you should adjust the temperature of the refrigerator or contact a specialist if it is set the maximum temperature parameter, but it still does not decrease.
The refrigerator temperature setting depends on what the refrigerator manufacturer has prepared for you. It can be a mechanical switch (most often in the form of a circle that can be set to a certain temperature), or it can be an electronic setting. In such cases, a touch or button display is placed on the refrigerator door, allowing you to set either the temperature mode or the exact temperature for the compartments.
